1987: Master’s Degree (Laurea) in Biological Sciences (110/110 cum laude), University of Florence

1994: Ph.D. in Biochemistry

1995: Winner of the public competition for a position as Assistant Professor (Ricercatore Universitario) of Biochemistry (Academic Recruitment Field: E05/A)

1996: Postgraduate Specialization Degree in Biochemistry and Clinical Chemistry (70/70 cum laude)

1998: Tenure achieved as Assistant Professor (Ricercatore Confermato) at the University of Florence

2003: Qualified for the position of Associate Professor (Scientific-Disciplinary Sector: BIO/10)

2005: Associate Professor at the Faculty of Mathematical, Physical and Natural Sciences, University of Florence

Current research interest

  1. CHARACTERIZATION OF PEPTIDE FRACTIONS FROM SOURDOUGH TO PROCESS HEALTHY CEREAL FOODS. Sourdough fermentation is one of the oldest biotechnology methods to ferment cereals. Thank to this process leavened baked gods are enriched in peptides, polyphenols and other metabolites equipped with antioxidant and anti-inflammatory activity on cultured cells. 
  2. CHARACTERIZATION OF CERATO-PLATANIN, a fungal protein that is the first member of a fungal protein family showing a double ψ/β barrel fold and equipped with immunomodulatory activity on both plant and animal cells
  3. BIOLOGICAL VALORIZATION OF PLANT BASED WASTE AND BY PRODUCTS. Through a combination of spontaneous and controlled fermentations, the study investigates how microbial metabolism can be harnessed to produce valuable bioactive compounds, (including bioactive peptides, organic acids, and phenolic compounds in by product from agriculture) to be tested on cultured cells and model organism.

Main scientific contributions

  • The isolation, characterization of biological activity and 3D structure determination of the fungal protein cerato-platanin allowed the creation of a new protein family called cerato-platanin family comprising biologically active proteins involved in activation of both plant and animal defence
  • Characterization and identification of bioactive peptides breads from sourdough fermentation: molecular basis of the nutraceutical properties of fermented foods
